** Costa Rica Red Honey - This year’s offering from the Chacóns at Las Lajas is called Red Honey. Cherries are picked at peak ripeness, floated for sorting, and then pulped, leaving 100% of the sweet mucilage before being transferred to raised beds for drying. Heightened candy-like sweetness, lemon-lime citrus, fresh caramel with notes of concord grape and brown sugar. $18.75 / lb

** Kenya Nyeri Ichuga - Nyeri, home to the Kiama Farmers’ Cooperative Society. The Ichuga Factory, one of Kiama’s four wet mills, produced this delicious lot by selecting the ripest cherries and processing them using fresh water from the Gathiururuko Stream. The coffee bursts with blackcurrant, sweet tomato, tart cherry, and port wine rounded out by a syrupy body and crisp acidity. $18.95 / lb
