This year’s offering from the Chacóns at Las Lajas is called Red Honey. Cherries are picked at peak ripeness, floated for sorting, and then pulped, leaving 100% of the sweet mucilage before being transferred to raised beds for drying. Heightened candy-like sweetness, lemon-lime citrus, fresh caramel with notes of concord grape and brown sugar.
